In 2021 we discovered the wonders of producing maple syrup. For 2022 we have scaled up and plan on producing more than 200 gallons for many to enjoy. Below are some of the highlights that will make Maxwell’s Maple unique to other sugarers.

Net Zero

Large scale maple production frequently uses a considerable amount of oil to evaporate the sap leaving a significant environmental impact.

We will only ever use wood collected only from dead or dying trees in our sugarbush. Wood is cut using an electric chainsaw with bio-degradable chain oil. Wood is all hand chopped!

Our high efficiency Lapierre evaporator allows us to boil up to 100 gallons of sap with just one cord of firewood!

In 2023 we acquired a Leader MicRO2 Reverse osmosis unit. This unit will be capable of removing 80% of the water from our sap all powered by solar! Where we used to have to boil away 40 gallons of water from sap for one gallon of water of syrup, we now only have to boil away roughly

Maple sap is our only ingredient

Maple candy, maple sugar and syrup all have just one ingredient. Nowhere in the process is anything added. Bottles are filled boiling and sealed to naturally not spoil.

Roadmap

100% of maple syrup sales will be reinvested into sugaring supplies and eventually support local agriculture.

Roadmap:

2022 sugarhouse is constructed, lines to 500 trees and a new evaporator complete

2023 Leader MicRO2 reverse osmosis unit, lines extened to 600 trees complete -organic certification

2024 Lines extend to ~1000 trees High vacuum sugar collection system

2025 Lines extending into neighboring woods pending permission, trees 1500+ syrup producing 300-400 gallons

2026 Sugarhouse expansion, Roadside shop, candy and goods available year round

2027 and beyond - work with local agriculture and landowners to extend into other sugarbushes
